If weather Permits I will be taking the family fishing this coming weekend and possible sometime during the week(Spring Break). Momma does not like to go off shore so we will be in East and West bay. So if anyone is heading out in this direction let me know. I am hoping to go also to Freeport. I went with a buddy of mine on his boat and cought this 7" tiger shark. We had a big fish fry with this big boy and so I am hoping to do it again soon. |

That should get Atthewall's blood pumpin... I'm not sure where Dean is but if he has his boat back I am sure he is very interested in getting out. Congrats on the shark and I look forward to this spring and summer and the pics you'll be posting. Good luck this weekend and make sure you take the camera... Nice, there are some nice sharks caught every year in Freeport. (or there was when I was growing up) Love to fish and hunt.

Thats a nice Tiger and I bet he ate very well. Good luck during spring break. I might venture down to Padre Island National Seashore during that time frame to soak a line for a few surf bound sharks. |

That's bigger than anything I've hooked into yet! Is that good eating? Do you have to make any special handling when caught? I hear that you are supposed to gut them alive in order to prevent something from happening to the meat? All In A Days Fun!!!

I caught this tiger shark 30 miles off Freeport, the tiger took about an hour to bring him in. Once I got him to the boat one of my friends hit him on the head with a bat and the other lasoed its tail. When ever you catch a shark you want to bleed them because they piss through their skin. I usually make a cut on it tail as we did on this shark. If you do not bleed the shark it will leave a very bad taste in the meet. Once we were sure that the shark was dead which was an hour later, we gutted it. This is the biggest shark that I have ever caught. The next biggest thing that I have caught was a sting ray with about a 4-5 foot wing spand which I let go. Sorry on pictures of that one. |

is the cutting of the tail to prevent it from tearing up the boat?? or is that the bleeder also is this process done in the boat, or over the side? my fat fingers cant spell I'll probably turn into a floating turd and Picou will break the knob off my post counter immediately. ATW 2/10/05

I have always made the cut on the tail, habit I guess. I usually cut the sharks outside the boat otherwise you will have a mess. If the shark is about 4-5 foot you can gaff it throu the head, wait a few minutes then have your friend grab and slice the tail. Then let it bleed over board for a few minutes then you can it in the cooler. If you want to gut it at this time you can. Shark meet is nice, all meat and no bones! |

That is a big negative, Sturm!!!! My experience with shark (one time): People who eat shark don't have other good fish to eat. |

Bigun, Maybe the people that caught the shark that you ate didn't bleed it. How was the shark cooked that you ate? People that catch and eat shark do have other good fish to eat. The day I caught this shark we also caught some snappers, triggers, and a cobia. I have also caught many of other saltwater and freashwater fish. Do you like deer meat? some people don't because they say it has a bad tast. But if you know how to season and cook the deer meat, it does not have a wild game taste. If you ever eat shark again, try it broiled in butter and garlic or fried in a cyan pepper or limon pepper batter you may find that you like it. |

4Rods, I was just messing more than anything and looking to stir the pot some around here. Pretty much knew what the response would be. I ate it baked and fried in the same sitting and hated it. I did not cook it though! I'm a great cook and know that prep and way something is cooked make all the difference. I knew the deer thing would come back somehow. I don't care for freshwater catfish either! Anyone want to respond to that. |

I have only had shark once and it was delicious -- grilled with a lemon butter sauce. I have considered many times buying a few steaks in the store but have yet to do it. Bigun, you have never had my freshwater catfish... I absolutely love it and it runs a very close second to crappie. It is all in how you prepare it... 2 - 4 pound channel cat with that sweet yellow meat... yum... Thank you Lord for my family and the waters I get to fish

Like my cuz from La would say: Bring on the tabasco and the beer, we all have a good time! Heck, it all taste like chicken. I was kind of waiting on someone to say something since I read what you said to Dean on the saltwater topic. It is always good to have some fun and that is why I joined this form. One day I think that we all need to get together and have some beer and anything that tastes like chicken. |

While living in California our neighbor invited us over for shark on the grill and it was the best fish I have ever eaten!! The taste and texture were a first time experience for me but man it was good! I'd have it again if I had the opportunity. Since I have heard about all of the special handling required, I let them go when I catch them. Regarding the fresh water fish - Mike - I know why you like to eat fresh water fish -- you coat them with cayann instead of corn meal before frying! That covers the taste of the lake! I cought some crappie and hybred and fried it like I do Spec or Flounder and it was awfull!! I wont do that again! Catfish is just plain ----- no thanks!! I have had it at several resturaunts including Papadeaux and just do not like it. Same goes for my wife and daughter. All In A Days Fun!!!

Dean, sometimes I mix the cayann in with the corn meal before I fry it or add the cayann to the fish right after you take it out of the frier. I like my fish spicey and with a any brand of cold beer. If you want to make a batter fried fish, I use Jiffy Mix and add beer instead of water or milk and fry it. It will come out fluffy like at the restaurants. The wife and kids like it best without the spice. So I make it half mild and half spice when I fry. Otherwise the family also like when I broil the fish in butter and garlic or with lemon pepper and them squirt some fresh lemon juice on the fish. D### all this talk of cooking fish is making me hungry! |

Normally when I fry fish I lay it out in the sink and lightly sprinkle Tony Sachere's on it. Then I bread it with Corm Meal and pan or deep fry it. I will be trying to broil some Snapper filets this weekend - I'll try it like you say. All In A Days Fun!!!

The time I had shark was at your neighbor's house in Laguna Hills Dean... I agree that it was great. About the fried fish... Ya'll just cannot cook if you think fresh water fish is nasty. I absolutely refuse to eat catfish in a resturant because they do not clean it properly. As with any fish, the quality of the flavor is a direct representation of the effort you put into it before going into the grease. Use corn meal, corn flour, cayenne, Tony's, whatever... If you do not prepare the meat properly it will taste like crap. The most common mistake people make is leaving the "fin" meat and "blood" meat on fillets. That stuff will completely and totally change the flavor of the fish when cooked. The fin meat turns mushy and greasy and STRONG. I cannot stand to eat a redfish fillet that has not had the red meat removed. When you BBQ a fillet, I can eat around that meat with no problem. But if someone takes a whole fillet and dumps it into the grease it is just plain nasty. I already have a document that I wrote several years ago about properly preparing fish for cooking on the site Proper Fish Prep Believe it or not, this one page gets almost as many hits/month as the index page. I need to add to it for those who are imaginationally challenged... I do not fry my fish with loads of cayenne and I only use corn flour. I like a light crispy crust on my fish. I use Zatarain's Fish Fry and only add some seasonings to my egg/milk bath. Now when I bake fish I use a liberal coating of cayenne on top and that is what you remember Dean. I know the fish I fried in Galveston at the beach house was not over seasoned. Anyway, you boys who say that catfish and other freshwater fish tast bad are just highlighting the fact that you don't know what the heck you are talking about... Don't worry though, I will gladly educate you and have you cooking fish like a pro in no time. Anyone can cook speckled trout and flounder and make it taste good... #1 fish for taste is Crappie. #2 is everything else minus bass #3 Bass As you can tell we don't eat any bass around our house.

Mike, as I remember - you are almost right. When I had fried fish at your house was when you lived in Dallas (near Dallas - cant remember the town) it was very very spicy! BUT - Like you say, when you cooked it in Galveston it was very good! - but then again - in Galveston, it was fresh Trout and Flounder!!! I thought someone was with us that time for shark but I couldn't remember clearly. That was some GOOD SHARK though!! All In A Days Fun!!!

Nice Picture!! Seems to me that I still have more hair on top of my head than you do and I am older!! Something to do with the hat?? Also, I only wear my protector when I am on the water. This one is getting old - I wish I could find nother just like it!! I've tried several different kind but nothing works like this one. When we go offshore, we'll see who is in better shape at the end of the day. All In A Days Fun!!!
