Ok guys. I had some crawfish this past weekend, and I actually liked it. My question is, what kind of boil is best, and how in the world do you cook them. Be specific please. I have no clue how its done.

I like Zatarian's powder the best of them all along with some liquid crab boil. However Chackbay and Louisiana seasonings are not bad. You can also just use salt, liquid crab boil, and some cayenne .

There are all kind of variations to boiling crawfish but basics go like this:

If you want to do potatoes/onions for eating pour about 1/3 of seasonings you would use for crawfish plus about a 1/2 of a thing salt. Boil about 12 minutes. If want some corn, carrots, mushrooms, sausage dump it in and boil another 5 minutes. If not it takes about 15 minutes to boil potatoes (maybe less if fresh potatoes). Take vegetables out. Remember if you stick them in pan or ice chest to leave lid open. If not they will continue cooking and you will have a mushy mess.

Get your water boiling real hot with the Zatarian's powder required remembering that recommendation on bag will be on the spicer side depending on your definition of spicy along with some cut onions, a small can of Garlic Powder, and some cut lemons and oranges (can also just dump a can of orange concentrate in). Bring to boil and boil for 3-4 minutes. Shut fire out. Immediately pour about 1/2 to all of a small bottle of liquid crab boil into the water and stir real well. Let soak about 10 minutes. Serve.

Remember spice is all in how you like it. Taste the crawfish while soaking and remember that once cooled down they will be quite a bit spicer than eating hot. Add spice and let sit a little longer if not hot enough. Add salt if not salty enough. Etc, etc.

I know that Bigun is going to dissagree with me because he does it a little different -- very good, just different.

I use zatarains crab boil -- liquid and pouches (lots of it). I season my water and bring it to a boil then throw in my potatoes & corn let cook for 5 or so minutes. Then I take my purged crawfish and toss them in the water and boil for 10 or so minutes then remove the pot from the fire and let stand for 5 - 10 minutes before serving.

In my opinion, the trick to good crawfish is being able to keep your water boiling once you toss in the bugs. Same goes for frying fish also -- keep the grease hot. If the water cools significantly when you toss in all the bugs and it takes 10 minutes to bring back to a boil then you have to cook them longer and they get mushy. Keep your water HOT and cook less at a time if that is what it takes.

I purge my crawfish in fresh water with salt poured all in it. When the water looks dirty, I drain and refill. This is beer drinking time and takes about a half hour for them to clean themselves out.

This may be stupid question, but when do you add the crawfish, and how long do you boil them?

Don't disagree with you. That is how I always USED to do it. But wife's sister is allergic to something in crawfish but likes to eat vegetables so that is how I got into habit of cooking everything seperate. Don't have to worry about that anymore since she moved to Florida. I just got into habit of using powder due to it was easier.

You are boiling them way to long though and that why they are mushy! 3-4 minutes of actual boiling is way more than enough along with the soaking. You are dead on about the getting them back to a boil.

I did forget the purging part. Good point.

Maybe I am thinking about crabs for 10 - 15 minutes. I rarely time anything so it was a swag. I go by look or just instinct because to have the forethought to look at my watch is rare... :-) Not to mention how well the beer flows while boiling or frying food...

My crawfish are never mushy... :-) Also, I never tried throwing in more seasoning after I kill the fire to add flavor. These wimps around here always complain that they are spicy already.

I may have to go get a new pot and have a boil at the house in April. Jay, I'm not that far away from you so you could easily drive up for this. The only problem is that my burner stand is not the best for boiling because it sits too far from the flame. I need to keep my pot size smaller because I cannot keep an 80 Quart pot rolling once the bugs are tossed in. I can handle a 30 or 40 quart pot though.

Picou, you can get a good burner for aroun $20 bucks (at least around here you can).

Sorry I forgot one word in directions above:
Dump Crawfish. Bring to boil and boil for 3-4 minutes.

I for one learn from seeing/doing. Maybe there needs to be a bug cooking feast held so that we can learn from the masters! Would be a good chance to meet everyone. What do you guys think?

I'll go price pots. I'll also call the market and see what the price is running on 30 lb sacks of crawfish. I usually need to give 3 days advance notice.

Bigun... see what you can pick me up a 40 Q pot & basket for. My problem with the stand is the distance from the burner to the pot. I loose too much heat between the two. I need to lift my burner a good 2 inches to get better heat on my pot unless it is no bigger than the turkey friers that fit inside the ring. Maybe I should cut off the ring to get the bigger pots down closer to the burner.

My wife loves crawfish and the kids enjoy playing with them while they are purging.

Scooter, you may have to come on down for some mud bugs... :-)

Can I put in my .02 here???
I' do it pretty simply,,, Just season the water to taste with Zatarain's,, get it to boiling,, throw in some Kiolbasa's sausage cut into 1" pieces,, let them cook for about 5 minutes,, than throw in some quartered potatoes and corn cut about 1 1/2 inches long,, let it cook 5 more minutes,,, then throw in the crawfish and cook it another 3 to 4 minutes... pull them out and dump into an icechest,,, then I cover them with seasoning,,, TexJoy spicy is good, although I use my own concoction,,, close the lid and lettum sit another 5 minutes....... Dayum,, making me hungry for some,,,,

Yall don't go buy a pot. I have a 15 gallon Stainless pot I just need to get a small whole fixed in and we will be good to go. I add corn, and potatos to mine when I boil them.

An idea - Somewhere between Houston and Dallas would be good. I have a burner and a pot that we could use if we need to. Also I might rent a camper trailer and bring the family and go camping!

How many people do we have from Houston area? I know Dallas is even over an hour from us. We have at least one member from Tyler, and he's a couple of hours away from Dallas. Just trying to figure out if Dallas would be the central area or what.

That is why I originally was thinking about Fairfield or Richland Chambers. That is 1.5 hours south of Dallas (2 hours for me) Close enough to do a day trip but nice enough to stay the night also.

Don't forget about Chesapeake Bay Seasoning for crawfish. It's awesome on crabs, shrimp and mudbugs. Heck, I'll shake it on steamed corn too!
