Sorry I am so late for this post but I just haven't gotten to it yet. I have been watching ya'll post crawfish and I had to have some so I went for it!

I ended up buying 30LBS. These were the largest crawfish I have ever bought! Almost the entire 30lb were very large!

FIRST THING FIRST - CHILL THE BEER!





After consulting master chef PQ I set them up to purge

Purge

Had to handle them and chase the kids around!



Prepared the fixins and heated the pool!



Got the boiling pot ready and boiled the first batch!



Set up the serving table:



We also cooked Hot Dogs and Hamburgers. The crawfish turned out EXCELENT! Thanks PQ! Good Advice goes a long way - and of course - Wade posted some instructions that I referenced as well - Thanks Wade!!

Everyone had a great time - I actually had about 18people over and the food stretched out perfectly! PQ - Good thing you all decided not to come down that day - There would have been about a dozen crawfish left for ya!

That crawfish reminds me of the ones we would catch in the San Marcos river by the college... Definately some big bugs. :-)

It looks great and you get a A+ for beer preparation -- proud to say we are family now... :-)

Looking good Dean. Definitely looks like a river or spillway crawfish. They are large.

I boiled some large one's at Wes just southeast of Seguin myself this weekend. Hopefully Rob or Simek will post a few pictures on this site.
I've been known to pinch a tail or two in my life!

Good Stuff - I think I'll do it again this weekend?? The wife is having a baby shower for the neice - the guys are gonna go to the skeet range - maybe I'll pick some up on my way home from the range?? I have to go to Costco for some other supplies anyhow - maybe they have a bigger pot?? I know they have BEER and ICE and CORN and POTATOES and .... Mmmmmm!!! Cant Wait!!!

I do want the tails to be much more spicy though - How do I accomplish that?

Soak them longer for more kick.

BigUn soaks them for roughly 15 - 20 minutes after a 3 minute boil.

Or just add a little more cayenne or crab boil.
