What is your favorite recipe? Fried, baked,or broiled. My gandmother makes a mean mustard/cornmeal mix to roll her crappie in. It is really good.

That's what my dad uses, Jason. I don't eat fish, so I don't cook them. I know Keith's mom likes some of the store bought batter mixes, too.

I fry my fish in Zatarains corn flour. When I bake them I do it two different ways -- mayonaise & lemon for my wife or itialian dressing, lemon, soy sauce, cayenne, etc... for me & the kids.

I love Bigun's redfish fillets on the halfshell on the grill also.

Here is a document I created many years ago for preparing fish. I was searching the web the other day for recipes and I found 10 different pages out there linked to this one. I was amazed that people had found it and created links on their own cooking pages. Fish Preparation

After reading it again, I need to re-write it and fix some of the grammar errors and add some more text. When I wrote this document I also wrote an instructional on deep frying. All of this was for a "Public Speeking" course I was taking. I had to give an instructional speech so I did it on preparing/cooking fish.
