I could not stand it anymore and decided with all that fresh gator meat in the ice chest that I needed to cook some of it. I made a stop at the grocery store to pick up some frys, eggs, oil, and Zatarain's to complete my ingredients list for some delectible fried gator. I pulled out a couple of chunks of gator and started cutting it up in nice clean thin slices. It did not take long for things to come together. 3 eggs, a little milk, some cayenne, coarse black pepper, onion powder, and garlic powder all go in a bowl and get blended well. I add the washed meat and give it a good egg bath. Swimmin Gator: As usual, I start with the french frys and just before they are ready I toss in a few hushpuppies to crisp up along side. Once that batch is out and salted I batter my meat and it goes directly from the corn flour into the pot to keep the dusting light. Generally, the first batch of meat comes out and the nibbling starts... Batch #2 cooking: Completed batch #1 & fries: -- YUMMY!!! Needless to say, the food was delicious and we all enjoyed some fresh fried gator meat. The girls were very excited when I told them we were having gator tonight and no-one was dissapointed at the finished product. We all stuffed our faces like it was our last meal and one by one leaned back in our chairs and let out a contented groan when our plates were clean -- ahhhh, full bellys... Now that I have had a few beers, ate some great alligator, and sat on the couch like a slug for a little while... I think I will get busy on the gator expedition report... Thank you Lord for my family and the waters I get to fish

You know you could have mixed some mountain oysters into that mix and noone would ahve ever known. |

Until they ate it at least... Some good fried gator. Been awhile but it is lookin good PQ. You might still have some cajun left in you after all. I'm still shocked that you actually killed one finally that had enough meat to eat. It really is a snook!!!!

We definately stepped it up in the size catagory. There are bigger ones out there and the next time we will set the lines a little higher if the area is right -- would be a waist of time if we get a shallow compartment. Bigun, I'll never try to compete with your cookin but I am pretty good at it. P, I have never had mountain oysters but I bet the texture is a lot like clam strips. Just the thought is enough to keep me from them... Thank you Lord for my family and the waters I get to fish

The smaller ones are more like chicken livers. If you get bigger ones they are squishy and when you bite into them they will squirt into your mouth. |
