I have been thinking about having some crawfish for several weeks now and Saturday morning I took a chance and called the seafood market to see if they had any extra -- he had 4 extra sacks... :-) Here it is, Easter weekend and I had not boiled any crawfish yet. I reserved me a sack and headed that way. They told me they ordered 108 sacks and already sold 106 when I got there.

I got the bugs to the house and started the cleaning process.


Of course, what is a crawfish boil without the cold beer...


We had plenty of crawfish and I knew Matt's wife was out of town this weekend so I extended an invite to enjoy some crawfish.

I bought a new pot this year -- 60 quart -- and in my haste to get some bugs cooking I forgot the veggies with the first batch.





The second batch I was able to get the corn, potatoes, and pearl onions in the water going before I got the last 10 pounds or so in the water and let me tell ya'... it was all good!!!



We had a great time and ate well... I only ended up with about a pound and a half of tail meat left. Unfortunately, today I have to clean the pots and ice chests...

I can't wait to cook some more... :-)

Looking good PQ and I'm sure Matt loved the invite! :-) I have not had any crawfish myself this year yet. Will be a good project to accomplish next weekend at the Capote Fin and Feathers IF I can afford the gas to get there! :-)

Heck yeah PQ and well done! Remember to not sip a couple of cool ones till after the first pot. It clouds the judgement LOL! :-)

Slap ya' mama is definately some good stuff Bigun... I don't use it often but when I do I wonder why I don't use it more often.
