I know you fellows have talked about this many times on this site. I want to cook some mudbugs this next weekend if I can get a big mess of them. How about a quick tutorial from the experts out there. Bigun, Picou....help a brotha out.... |

The way I like to do it is start out with the crawfish and crab seasoning. Season the water to your liking. ( I use the powdered seasoning, not the bags} Get the water boiling then drop in some sausage sliced about an inch thick, and some small red potatoes quartered. Let it boil 5 minutes then add some corn ears, sut into about 2 inch sections, Let it boil about another 5 minutes then add the bugs and boil till they float, usually about 3 to 4 minutes. Kill the flame and let them soak few minutes. Take em out and dump em in a cooler and sprinkle em with Barnacle Dust,, then get to eating... Born to fish-Forced to work

Not much different than Barnacle. Make sure you clean and wash crawfish real good in a tub. I usually just throw everything in until the water smells right but will try to give you around about measurements. You can adjust based on your own tastebuds. The measurements I give you will not be too spicy or too salty but a good mix of both. If you like spicy you will need to add more powdered seasoning or some cayenne. I usually put a container of salt and about 2-3 cups of powdered seasoning to start with. Bring to boil and cut fire back some. Throw in whole red potatoes, sliced in 1/2 onions, and whole ears of garlic and boil about 13 minutes. Put in your corn, mushrooms, carrots, cauliflower, asparagus, etc, etc (all optional) for the another 3-5 minutes. Take vegetables out of pot and put aside. Bring water back to hard boil. Put in another bottle of salt, 3 cups of powdered seasoning, and a 1/2 cup of granulated garlic powder. Throw in around 6 sliced lemons and 2 sliced oranges. Put crawfish in and cook like Barnacle said. When you shut off the fire put about 1/2 to 3/4 large bottle of liquid crab boil in and stir real good. Let them soak about 5-8 minutes. Thanks for sharing the recipes for the bugs. Sounds real tasty. Amateur questions: Anyone: What kind of powered seasoning are you using; (Name brands?) Bigun: How many ounces of salt are in the “bottle of salt” you speak of? Anyone: Where is the best place to get bugs in Dallas or east of Dallas? We are about 25 miles east of Dallas. Thinking about whipping up a batch of bugs for Tomc_junior when he returns Thanking Him, all day long --- tomc

I use one container of salt for the vegetables and then another one before put crawfish in. The potatoes will soak nearly all the salt up. I don't care for boiling my vegetables with whatever I'm boiling due to I find they keep soaking the seasoning and really get to hot for the kids to eat however it is a quicker easier way to do it if can handle the spice. Powder I tend to use Zatarians but like the Chackbay and Louisiana brands also. I like the Zatarian's Pro Boil also which is in a black tub but it has lots of celery seasoning in it and tends to be a little spicier. You can cut back on the salt if you use more of the Zatarians (or whatever brand you like) powder. To purge/clean crawfish I just put them in a big tub and put some tap water on them for about a 1/2 hr and stir them up once in a while dump that water out and start over one time. I can tell you that the crawfish we get around here tend to be a lot dirtier than the one's I've boiled bought in Texas. Mine don't vary much from above. I use a 150 qt ice chest to purch my crawfish. I dump the crawfish in and fill with water. If the water is really dirty up front I drain and repeat immediately just to get the major dirt out of the water. I will let them soak for a half hour then drain and re-fill. I repeat this until the water stays clean. I'll usually cook corn, new potatoes, pearl onions, lemons, and the crawfish. About a half pot of water (maybe a little more) and I add 2 seasoning bags, 1/4 small bottle of liquid crab boil, and a full bag of powder along with a 1/4 - 1/2 container of salt. Like Bigun, I judge by the smell of the water as it boils. If you take a big wiff and it makes you cough you're almost there. I toss in the potatoes & lemon first for about 5 minutes then add the corn for another 5 minutes or so. Then I add the crawfish for 3 - 4 minutes. I remove them from the heat and let stand in the water for 5 - 10 as it cools the seasonings are sucked into the meat of the crawfish (and potatoes & corn). I think from what has been put here you'll definately figure it out. If you have ever boiled potatoes or corn, you'll know what to do because the crawfish should only take 3 - 5 minutes to cook. HB, go by your local albertsons or kroger and ask them if they can get 'em for you. I am pretty sure that during the season I can have albertsons order them, I just have to pre-pay. I've just been buying from the market for so long that I enjoy going there. I'll check Albertson's in McKinney and let you know -- a lot closer to the house. Maybe but this way we won't be biased toward anyone in particular, and you would have a hard time finding anything Dru and I are knowledgeable about. Well maybe not Dru he seems to know a lot about Byron Velvick and his 11 inch-------------swimbait. |

Thanks for the great cooking advice. Now all I have to do is find a pot with a strainer and some bugs. I am thinking Academy might have the pots. I will check Kroger for some bugs. Tomc_junior is heading out on his last deployment. He is due back in about 60 days. We talked yesterday and are planning on fishing the IBC tournament in June on Caddo.
