A little olive oil, then saute Green onions, bell pepper and garlic. Then add 2-- 12 oz. cans tomato sause, 1 small can whole tomatoes and 1 small can of rotel tomatoes.. add generous amount of Tony Chachere's. Simmer on low heat for about 1 hour. May have to add a little water to prevent from getting too thick. Prepare pot of rice. Lay fish fillets into simmering rouex and gently push down into mixture. Put large scoop of rice onto plate. 7 minutes fish are perfectly done. Gently lift fillets out and onto bed of rice, then add generous amount of rouex on top
