Dice up two or three onions, a couple sticks of celery, and 1/2 bell pepper. Put a Tbsp or so of oil in a pan and bring to med high heat. Put in vegetables and stir occasionally until they make a burnt mess. Throw in some diced garlic and cook about a minute more. Take several cans of tomato sauce, one can of rotel, and put in pot and cook down real good adding salt, pepper, italian seasonings, and garlic powder. Will cook down to a thick sauce. Stir good occasionally. Squeeze a lemon into the sauce and take some cubed fish and throw in sauce and stir. Cook just long enough to cook the fish good. Fish will make sauce quite a bit thinner. Serve over rice with potato salad on the side.
